Today's post is my recipe for Instant Pot carnitas! This recipe is not very precise, buuut it's pretty hard to screw up, so at least there's that. (What. You didn't think it would always just be cute photos of me, did you?) You need: - An instant pot - 1 chonk of pork butt (pork shoulder for you non-Americans) - Vegetable oil or canola oil or whatever. - 1 orange - 1 lime (I used pre-packaged lime juice because I'm basic) - 1/2 head of garlic - 1 beer of your choice (I used a tasty lager because that's what I like to drink) - Cumin - Oreganoooo - Salt (fancy kosher salt preferred, but any salt is good) - As much or as little chili powder (or other types of chili) as you like putting in foods. Okay so: - Juice your orange and lime (for as much juice as you can get out of them) and put the juice in a bowl or cup or whatever. Dump 1/2 cup of your beer in there. Smash up the garlic and add it in. Add in a little spoonful each of the oregano, cumin, and salt. Add chili to taste. - Take your chonk of pork. Salt it on both sides. Rub that salt all up in there. Wash your hands after. (You can also add black pepper at this stage, I'm just not huge on black pepper.) - Set Instant Pot to "saute". Dump in a bloop of your oil. Sear pork on each side for about a minute, til it's nice and slightly browned. - Dump that tasty beer-juice-garlic-etc sauce you've made into the Instant Pot. Stir the pork around in it for a few seconds. - Set Instant Pot to high pressure for 30 minutes (or 40 minutes if it's really chonky). - Wait. Consume the rest of the beer you opened. - Once the Instant Pot is done doing its thaaaang, take the pork chonk out, and shred it up with two forks (or a fork and tongs. Or a fork and whatever. Or your hands. But it's gonna be really hot, so maybe don't do that). - Preheat oven to 200c (or turn on broiler, if you're fancy and have a broiler). - Place shredded pork evenly in a layer onto an oven tray. Dump some of that juice from the Instant Pot back into your pork for max deliciousness. - Put it in the oven and cook it until the top gets all crispy and delicious-looking. - Eat. In a taco! Or a burrito! Or by itself with your hands, which totally is not a thing I do. Because I'm absolutely a civilized adult. FIN.
